Autumn is finally here, and what better way to celebrate than with a delicious dish to compliment the season. Ben Baker, our Executive Chef at Travaasa Austin shares his original Apple Tart Recipe, and with the perfect mix of sweet and sour, it’s sure to become a fall favorite. 1 bottle Pinot Grigio 1 cup of sugar 1 batch of pie dough 2 fresh red Gala apples (peeled, halved, and cored – I use tablespoon to remove the seed core) Fresh tarragon for garnish (optional) For Pie Dough 2 cups all-purpose flour ½ lb butter 1 tsp. salt ⅓ cup water For Tart Pour a bottle of your favorite Pinot Grigio (or any semi-sweet white wine) in a sauce pan. Caramelized Sweet Potato and Goat Cheese Salad with Cilantro Oil

Why stick to the basics when it’s so much more fun to get creative? Travaasa Austin’s very own Executive Chef Ben Baker shares his delightful Sweet Potato and Goat Cheese Salad recipe, which is sure to be a hit at your next get together. 2 large sweet potatoes 3 large beets 1 bunch cilantro ½ cup sunflower seeds 1  lemon (for juice and zest) 1 cup oil (a blend of canola and olive is ideal) 5 oz goat cheese Bake sweet potatoes and beets until just tender. Remove skin and slice into disks. Slice a 5 oz log of goat cheese into eight pieces. Blend 1 bunch of cilantro, ½ cup of sunflower seeds, oil and the juice plus zest of one lemon to make cilantro oil.  Caramelize the sweet potato disks and season with salt and pepper.
