Healthy Super Bowl Recipe: Creamy Spinach Dip & Baked Garlic-Herb Wonton Crisps

Whether you’re throwing your own Super Bowl party or heading to a neighbor’s bash, here’s a healthier chip and dip recipe that is sure to be a winner.
Creamy Spinach Dip
This light, healthier spinach dip is made with reduced-fat cream cheese, Greek yogurt and low-fat cottage cheese. Slim it down even more by serving it with crunchy vegetables.
What you need:
- 1 small shallot, peeled
- 1 5-ounce can water chestnuts, rinsed
- 1/2 cup reduced-fat cream cheese
- 1/2 cup low-fat cottage cheese
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- Freshly ground pepper, to taste
- 6 ounces baby spinach
- 2 tablespoons chopped fresh chives
Pulse shallot and water chestnuts in a food processor until coarsely chopped. Add cream cheese, cottage cheese, yogurt, lemon juice, salt and pepper and pulse until just combined. Add spinach and chives and pulse until incorporated. Serve it with baked garlic-herb wonton crisps and crunchy vegetables.
Baked Garlic-Herb Wonton Crisps
These fresh herb & garlic wonton crisps will satisfy your need to crunch and pair perfectly with creamy spinach dip.
- 20 wonton wrapper(s)
- 2 spray(s) cooking spray
- 1 teaspoon minced garlic
- 1 tablespoon fresh thyme, fresh, chopped
- 1 tablespoon rosemary, fresh, chopped
Preheat oven to 425º F. Coat a baking sheet with cooking spray and place wonton wrappers on sheet in a single layer. Bake for 2 minutes; remove from oven. Flip wrappers; sprinkle with garlic and herbs. Lightly coat wrappers with cooking spray and bake for 2 more minutes. Remove from oven and place wrappers on a wire rack to cool.
