Of course, there’s always the go-to box of chocolates, but why not try something extra special this year and celebrate your love with a healthful twist? This Valentine’s Day, stay in with the one you love and make this delicious strawberry almond salad with basil-balsamic vinaigrette.

 

What you need:

Dressing:

2 medium uncooked shallots, chopped

1/3 cup balsamic vinegar

1/4 cup water

1 Tbsp. olive oil

1 Tbsp. honey

1/4 Tsp. black pepper

2 Tbsp. basil, chopped

 

Salad:

8 cups fresh mixed baby greens

1/2 cup sliced almonds, toasted

1/2 cup (sliced) uncooked red onions, sliced

16 oz. strawberries, sliced

 

 

Process first 6 ingredients in a blender until fully blended. Stir in basil.

 

Combine greens and remaining ingredients in a large bowl. Add dressing and toss gently. Serve immediately.
