Nothing says Texas culture more than our BBQ sauce and ribs. With Memorial Day weekend coming up, there is no better time to prepare something special for your outdoor gathering that has a true Texas flair. Here is a tasty some finger-licking good barbecue sauce and ribs recipe from Travaasa Austin’s Executive Chef Benjamin Baker. When we asked Chef Ben what makes this BBQ sauce and rib recipe amazing he said, “It is perfect for entertaining. You can make the bbq sauce and bake your ribs a day in advance.” So, when it is time to enjoy the most tender ribs you will ever have they will be ready for you and your guests in 20 minutes!  The key ingredient in this recipe is the hot smoked paprika.  Chef Ben says, “It may be one of my favorite spices, so if you have never had it you must try it…you will never go back to regular paprika.”

 

Ingredients:
2 racks of baby back ribs
4 Tbs hot smoked paprika*
1 Tbs red pepper flakes
1 Tbs onion powder
1 Tbs garlic powder
Salt and pepper

Instructions:
Pre-heat the oven to 250 degrees.  Mix all the spices together to create a dry rub.  Rub the ribs liberally with the dry rub and wrap the ribs (individually) in 2 sheets of foil.  Place in the oven and bake for 2 1/2 hours.  When the ribs are done allow them to cool in the foil and place in the refrigerator over night.  When you are ready to enjoy the ribs pour bbq sauce (recipe to follow or you can use your favorite) over the ribs and place on the grill for 10 minutes per side.

Old Fashion BBQ Sauce

Ingredients:
1 1/2 cups of tomato sauce
1 dark beer
1/2 sweet onion (chopped)
2-4 garlic cloves (chopped)
2 Tbs dijon mustard
Olive oil
Salt and pepper

Instructions:
Saute the onion and garlic in olive oil over medium heat until they are translucent (5-8 minutes).  Add the dijon mustard and saute for 1 minutes and then add the beer.  Once the beer has reduced by half add the tomato sauce, salt and pepper.  Enjoy!
